Coconut Raspberry Balls
Ingredients
- 1 1/2 cups almond meal 
- 1 1/2 cups dried, shredded, unsweetened coconut 
- 1/2 cup chopped macadamia nuts 
- 2 pinches of salt 
- 6 Tbsp. xylitol 
- 2 Tbsp. vanilla extract 
- 2 Tbsp. lemon juice 
- 1 cup of coconut oil 
- 1 cup puréed raspberries 
Instructions
- melt the coconut oil until liquid, remove from heat & add xylitol & vanilla, stir, set aside 
- blend the macadamia nuts & add to the almond meal & coconut 
- purée raspberries and strain seeds out by pressing through a strainer 
- add xylitol & salt to the raspberry purée 
- mix the purée into the coconut oil, then add to the dry mixture 
- form into balls with your hands 
- roll balls in the shredded coconut 
- chill in the refrigerator 
- enjoy with a hot cup of green tea!
