Healthier Chicken Pot Pie
Ingredients For Filling
- 1 cup of coconut oil 
- 1 diced yellow onion 
- 4 cloves of garlic, chopped 
- 2 diced chicken breasts 
- 1/4 cup chopped parsley 
- 1 diced sweet potato 
- chopped carrots 
- frozen peas 
- 3 cups of chicken broth 
- 1 cup of coconut milk 
- dash of nutmeg 
- sea salt to taste 
- cracked pepper 
- cayenne pepper (optional) 
- 1 jalapeño pepper (optional) 
Thickening agent for filling if desired
- 2 Tbsp. coconut meal 
- 2 Tbsp. butter 
Ingredients For Crust
- (Mix together to form dough) 
- 2 cups of almond meal 
- 3/4 cup of coconut oil (melted) 
- 1 egg 
- sea salt 
- cracked pepper 
- dash of nutmeg 
Instructions
- preheat oven to 350 degrees 
- sauté the diced onion and chopped garlic in coconut oil 
- add the diced chicken, salt and pepper 
- add the parsley and the rest of the vegetables, add the jalapeños and cayenne if desired 
- add the chicken broth and simmer 
- on low heat, add the coconut milk, coconut meal, butter and dash of nutmeg 
- pour chicken mixture into a glass baking dish 
- roll out dough for crust until flat 
- place over chicken mixture and pinch ends until a seal is formed 
- sprinkle with salt, pepper, nutmeg and cayenne if desired 
- bake in the 350 degree oven for 20 minutes or until crust is set
